Blue Banana Smoothie


Two weekends ago, we took a break from remodeling our backyard to enjoy the beautiful weather we've been having. We took a short drive to Restoration Oaks Ranch to pick blueberries. For years, we've passed the sign but never stopped. Blueberries aren't cheap at the store...and I still wouldn't classify them as "cheap" when you pick them at the blueberry farm. But, for $15 we got an afternoon out picking (and tasting) blueberries with our girls and came home with 2.5 pounds of fresh blueberries. Since we had far more blueberries than we could eat fresh, I took Jessica's advice on how to freeze berries.

Frozen blueberries are wonderful to eat as a cool treat...or to throw into a fruit smoothie. Here's my version of a "Blue Banana" smoothie. Since I have a Magic Bullet (thanks to my father's retirement infomercial shopping), it's easy to whip up a smoothie for one or split it into two cups for the girls. When you use frozen fruit, you don't need any ice cubes.

Blue Banana Smoothie

1 banana, frozen and cut into pieces
1/2 cup blueberries, frozen
1/4 cup plain yogurt
1/2 cup milk
1/2 cup apple juice
1 teaspoon lemon juice

Place all ingredients in the Magic Bullet cup with blade on (or in a blender) and blend until smooth.
