Super Bowl Food: Roasted Red Pepper Hummus

I have very few memories of the Super Bowl. In my house growing up, we didn't celebrate "Superbowl Sunday" like many Americans do. No, the only true Super Bowl memory I have is that of Super Bowl XXVII...the one in which I danced in the Pre-Game Show along with other high school dancers from all over Southern California. We didn't actually get to stay at the game, instead they shipped us off to a hotel for a viewing party. I can't say that I watched much of the game, but I did enjoy the food!

However, now that my brother-in-law lives in town, my husband has someone to watch sports with. We just might watch the Super Bowl this year. Of course, snacks will be needed! What good is a TV viewing party without snacks? Perhaps I'll make up a batch of Caramel Corn, some Chili Popcorn or my newest creation. Since I had a ton of lemons from my dad's tree and some staples in the cupboard, I thought I'd try my hand at making some hummus with roasted red peppers. It was yummy! If I get a chance this weekend, I may even try out Fishmama's recipe for Homemade Pita Bread.

Roasted Red Pepper Hummus

1 can chickpeas (garbanzo beans), rinsed & drained with the skins removed
1/4 cup chopped roasted red peppers
1/4 cup fresh lemon juice
2 Tablespoons olive oil
1 Tablespoon seasame seed oil
2 cloves garlic, minced
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Blend all the ingredients in a food processor until you reach your desired consistency. Serve with
crudités or toasted pita wedges.

I really want to make my own hummus and I love roasted red peppers. I like that this one doesn't use tahini. I didn't want to spend the money on it not knowing if I would like it. I have plenty of sesame oil though!

Jenny, that's exactly why I use sesame seed oil. I was shocked by the price of tahini...and it was only available in a HUGE tub. I would have to make a lot of hummus to use it up. This is not necessarily authentic, but I think it tastes good.
